Week 26 brings us to the half way mark of {Project: Food Budget}, how time flies!
The creamy avocado pasta was a hit with the fam last week, so it features again this week.
I'm forever reinventing my approach to menu planning as I ride the often frustrating road that is tight budget, many kids, many wants...and a good handful of "that's disgusting" (plural)
This week I'm all about simple - save the trouble, it's not likely to be appreciated!
That said, still driven by fresh ingrediants, simple but beautiful flavours and as always, a lot of lemons, fresh herbs, and garlic:D
- 6 to feed, 3 big ones and 3 smaller ones.
- 2 meat meals a week and 5 vegetarian.
- 4 packed lunches per day.
- baby food too...
- budget is $200 per week inclusive breaky, lunch, tea and snacks.
Thursday: Creamy Avo Pasta

Cook 1 serving angel hair pasta according to package instructions, about 12 minutes (including boiling time!). Meanwhile, combine the juice from ½ a lemon, 1 garlic clove, 1 tbsp. olive oil,½ of an avocado and 1/8 cup basil in a food processor and puree. Toss together pasta and sauce and season with salt to taste.
Friday: Open White Bean Sandwich

Mash ¼ can rinsed and drained white beans with 1 tsp. olive oil and a pinch of salt and pepper. Toast 1 slice of whole-grain bread and spread with the bean mixture. Top with 1 slice red onion, 5 cucumber slices, and ¼ avocado (sliced).
Saturday: Healthy Carbonara
Sunday: Home made pizza
Monday: Lemon & Garlic Chicken
Tuesday: {Simple Yet Fancy} Caramelized Onion Tart
Wednesday: Zucchini Cakes

Isn't it always the case that the most time intensive meals get the "that's disgusting" feedback, while the simple and fresh flavor combo's get the most fanfare?!
